Combine the smashed lemongrass and water in a small pot over high heat. Bring to a boil and add sugar. Lemongrass is one of my favorite Thai flavors. I keep a zipper bag of leftover lemongrass in my freezer, so I decided to pull it out and make use of the stems that are too rough for mincing (like for this yummy Vietnamese recipe).

Steps to make Thai Lemongrass Tea:
  1. Rinse the lemon grass well under running water before starting off
  2. Fill up water in a deep saucepan and let it come to a boil
  3. Meanwhile chop the hard end of the lemon grass shoot
  4. Chop the entire stem into smaller pieces
  5. Add the chopped lemon grass pieces to the saucepan and reduce heat
  6. Let the tea brew on low heat until a pale yellow colour liquor is generated
  7. Transfer the tea into a tea pot/pitcher(including the chopped Lemongrass pieces)and keep in a warm place to cool off a bit before you can consume it
  8. Serve with the required amount of lemon juice and honey.I have used 1/2 teaspoon per serving
  9. Enjoy while the drink is warm
