I have started making aloo gobi in my Instant Pot and I am amazed to see how perfectly tender the cauliflower and potatoes cook in a short time. The spinach is then combined with the cauliflower rice, almond milk, eggs, and most of the shredded cheese along with salt and pepper. A delicious low carb spinach, cauliflower rice and ham casserole recipe that is perfect to use up any leftover ham from the holidays. Add spinach and water and cook for a minute or two, until most of the liquid has evaporated.
Instructions to make Cauliflower and Spinach Daal:
- Chop everything up and place the onions, garlic, ginger and spices into the pot first
- Then add chopped cauliflower and sweet potato
- Then the coconut milk and some extra water. As well as the lentils.
- Pour the other ingredients in after the other veg is softened and let the pot sit for around 20 mins simmering. Or until the lentils are cooked.
- Serve with coriander, yoghurt and lime pickle.

This low carb dahl is packed with antioxidants, vitamins and minerals so although it's low in macros, it's high in micronutrients and we can't forget about those!
