  1. Take 1 kg Basmati rice
  2. Take 1 kg Onion chopped
  3. Take 750 gms Tomatoes chopped
  4. Take 8-10 Mint leaves
  5. Get 5 tbsp Ginger garlic paste
  6. Prepare 1/2 tsp Coriander leaves
  7. Get 300 gms Oil
  8. Make ready 1 kg Mutton
  9. Take 1 tbsp Curd
  10. Make ready 1 Lemon
  11. Make ready 7 Green chillies
  12. Get 2 tsp Chilli powder
  13. Make ready 1 tsp Chicken masala
  14. Get As needed Spices
  15. Prepare Colour (optional)
  16. Make ready Salt as per taste

This Indian Mutton Biryani Recipe was special during Eids. Ammi used to cook the Mutton Biryani in a huge vessel and distribute it among all neighbors and they really used to look forward to Eid for. A distinctive biryani full of flavour but low on spiciness and heat. Fragrant rice and soft mutton get together in this classic Calcutta biryani dish.

Steps to make Mutton biryani:
  1. Heat a large pan or kadai or large cooking bowl or large cooking pot. Anything but with lid
  2. Add oil then spices then onion sauté until done
  3. Add tomatoes sauté
  4. Then add ginger garlic paste and mutton sauté for 5 mins
  5. Add green chilli,mint,coriander leaves and sauté lower the flame and let it cook until mutton 80%done
  6. Meanwhile soak rice for 10 mins boil water separately add soaked rice with salt and cook until 90%done. Strain water and keep aside
  7. Now add chilli powder,curd,chicken masala,lemon and sauté add salt.
  8. Now add that strained rice and mix half
  9. On TOP put some colour water.about 1 tsp water tats it dont mix lot
  10. Now cover with newspaper or cloth on TOP of pan/kadai etc put the lid and let it dum for 20 mins
  11. Now off the stove dnt open for 15 mins
  12. Now before opening just shake the pan/ kadai etc now open and dnt over mix slightly from corners turns upside and down
  13. As masala will be in bottom
  14. Serve hot with onion raitha or brinjal chutney,
  15. Yummy dum biryani is ready to eat.
  16. Note:same method you can prepare vegetable biryani or chicken biryani
  17. For veg biryani 350ml oil.for chicken biryani 250 ml oil.
