- preheat oven to 350°F
- place diced apples and lemon juice in a bowl. toss to coat. set aside.
- cut pinapple tid bits into 4 pieces and cut cherries into 4 pieces. set aside.
- in a bowl places peeled whole banana's, rum, eggs, sugar, cherry juice, butter and sour cream.
- blend with hand mixer until blended but still chunky.
- sift together flour and baking soda. mix flour mix into banana mix by hand using a spoon.
- fold in apples.
- place all nuts and all remaining fruits into banana mix. and gently fold in.
- grease 2 bread loaf pans very well.
- fill said loaf pans halfway with mix evenly.
- bake on middle oven rack for 1 hour or until thoughrally cooked.. toothpick inserted into center should come out clean.. top should browned.
- cool on wire rack.
- slice and serve!
