Steps to make Sandwich Dhokla (without curd):
  1. To prepare white dhokla- In a container, mix rava, ginger chili paste, water, oil, salt, sugar and lemon juice. Keep this mixture aside for 15 minutes.
  2. Meanwhile, add 4 cups water in the steamer & heat it. Grease the cooking pan with oil. Take the mixture that was prepared and kept aside and add eno & stir briskly. Quikly pour this mixture in the cooking pan and keep the pan in the steamer. Cover the steamer & steam for 15 min on high flame and then for five min on low flame. Check with toothpick or a knife if the dhokla is ready. Then take out the cooking pan & take out the dhokla cake in a large plate & let it cool till we make yellow dhokla
  3. To prepare yellow dhokla- In a container, mix besan, ginger chili paste, turmeric, water, oil, salt, sugar and lemon juice. Keep this mixture aside for 15 minutes. Meanwhile prepare the steamer and cooking pot as earlier. Now take the besan mixture & add eno & whisk briskly. Pour the mixture in pan & put in the steamer for 15 min on high & the on low for 5 min. Check for readiness and then take out in the plate.
  4. To prepare chutney- Put chilies, fresh coriander, Jeera and salt in the mixer jar & blend a smooth paste.
  5. Making of Sandwich- Take our white dhokla and spread the chili chutney on it evenly. After that put the yellow dhokla on top of it and press gently.
  6. Making of Tadka- Heat the oil in a small kadhai, put rai (mustard seeds) & let it crackle. put jeera, sesame seeds, kadi patta and hing into it and switch off the flame. Add water in the tadka and immediately pour the liquid on top of the sandwich. Let the sandwich absorb the liquid for 10 min., then garnish with coriander leaves. Cut into pieces like cake (triangular shape). It is ready to eat :-)
