  7. Pour the olive oil over the meat.
  8. Cover with foil and cook for 45 minutes.
  9. At minute 30, remove the foil
  10. After it's done cooking, broil for 5 minutes to add some color to the meat.
  11. Serve it hot. I like to serve with a side of salad or risotto.
