  1. Take 2 lamb shoulders
  2. Get 2 garlic cloves
  3. Get 1 salt, pepper, ground coriander seed, dried parsley flakes, greek seasoning

Steps to make Greek Style Lamb:
  1. Preheat oven to 400°.
  2. Lightly tenderize lamb on one side.
  3. Heat a cast iron grilling pan with the olive oil on medium high.
  4. On that side of the lamb, press in half the minced garlic into the meat. season with salt, and pepper.
  5. Flip lamb over, press in remaining garlic and season with salt, pepper, coriander, Greek seasoning, and parsley flakes.
  6. Once the pan is hot, place the lamp (parsley side up) in and sear for 10 minutes on medium high.
  7. Pour lemon juice on top of lamp and cover with tin foil. Place pan in oven and cook to desired doneness.
  8. (Optional) The topping is a simple sauté of kalamata olives, feta cheese, pine nuts, and a little balsamic vinegar in olive oil.
  9. Sprinkle with a little parsley flakes and enjoy with other great Greek dishes.
